Sterling is usually saved for the place setting, but in the case of Executive Chef Matthew Franklin at Wine Experience Café & World Cellar, the sterling is the cuisine. Chef Franklin made 240 Union in Lakewood where his menu became a destination restaurant. Periodically, the self-trained Chef who earned his stripes in the business in San Diego and Taos will hold a regional wine pairing dinner featuring inspired dishes to complement the wine served with each course.

Chef Franklin is one of the new breed of chefs who practices light sauces. “I let the food shine through using quality ingredients,” he says. “Some chefs try to hard to be different. My theory is, ‘Don’t screw up the food.’ That means I don’t overdo just to overdo. I believe in freshness.”
